Organic Citrus Honey Carrots
Carrots are a popular vegetable with kids and adults alike. If your family isn't a fan or cooked carrots they'll love these citrus, honey carrots. If you don't have baby carrots peel and slice larger carrots about 1/2 inch thick, on the diagonal. I discovered Fountainview Farms organic carrots a number of years ago and they are the best tasting carrots I've ever eaten. If you ever come across them do give them a try.

Directions: Place prepared carrots in a large heavy bottomed saucepan, add enough water until just covered, bring to a boil and cook for approximately 5 to 7 minutes, until barely tender. Drain the water and return carrots to pan. Add all remaining ingredients and simmer over low heat for approximately 10 minutes, stirring occasionally and until the carrots start to caramelize or brown. |
