Barbecue Beef Biscuit Wraps

These are tasty little bundles of beef, cheese and biscuits all spiced up with Watkins barbecue sauce. They are delightful served warm from the oven and great for picnics and packed lunches.

3/4 pound lean ground beef
1/3 cup Watkins barbecue sauce concentrate, flavor of your choice
2/3 cup ketchup or tomato sauce
3 ounces cheddar cheese, grated, divided (about 3/4 cup)
1/2 cup green onions with tops, thinly sliced
1/2 cup red bell pepper, chopped
1 garlic clove, pressed
2 cups biscuit mix
2/3 cup water

Directions: Cook ground beef in large skillet over medium heat until beef is no longer pink, breaking into pieces.  Drain and set aside.  Mix together barbecue sauce concentrate and ketchup (or tomato sauce) in a measuring cup. Preheat oven to 350 deg. F.  In a bowl, combine cooked beef, 1/2 cup of the cheese, green onions, bell pepper, garlic and 1/2 cup of the barbecue sauce; mix well. 

Prepare Biscuit Mix as directed. Cut out 12 large biscuits and place on a cutting board.  Using a rolling pin, gently roll each biscuit into a 5-inch disk, flouring dough as needed. Spoon the ground beef mixture evenly onto center of each biscuit.  Gather up edges of dough over filling, pinching lightly to seal. Place biscuits, pinched side down, into muffin pan. Do not press down into cup. Cut through top of each biscuit wrap making a crisscross pattern.  Bake 25-30 minutes or until golden brown. Remove from oven.  Sprinkle the rest of your cheese over top of the biscuit wraps. Remove from the muffin pan and place on a cooling rack. Makes 12 bundles, serve with remaining barbecue sauce.

Note: Watkins Barbecue Sauce Concentrates are available in Original and Mesquite flavors.  Using tomato sauce rather than ketchup creates a not so sweet sauce which is great for diabetics or anyone who prefers less sugar in their diet. To add some heat to your Barbecue Sauce add a dash of Watkins Chipotle Liquid Spice or Watkins Jalapeño Hot Pepper Sauce. You'll find them all here in the US catalog or the Canadian catalog.
