Hearty Sirloin Tip Stew
This hearty crock pot stew makes a healthy yet easy dinner.
2 pounds sirloin tips (cut into 1-inch cubes)
2 tablespoons Watkins grapeseed oil
1 (14oz) can diced tomatoes
1 1/2 cups hot water
2 teaspoons Watkins beef soup and gravy base
1 1/2 cup canned or frozen corn kernels
3 medium carrots, peeled and sliced
1 medium onion, chopped
2 garlic cloves, minced or 1 teaspoon Watkins garlic granules
1/2 teaspoon Watkins ground cumin
1 Watkins bay leaf
1/2 teaspoon Watkins black pepper
Salt to taste
Heat grapeseed oil in a heavy frying pan, add sirloin tips to brown. Combine all other ingredients and place in bottom of crock pot, add browned sirloin tips. Cover and cook on low for approximately 8 hours or until beef is tender. Taste and add salt if needed.
This is nice serve with crusty whole wheat buns and a green salad.
Tip: If your mornings are too hectic, prepare everything the evening before and refrigerate. Then you just need to tip the ingredients into the crock pot and turn it on.
