Quick Raisin Cookies
These quick raisin cookies are a snap to make.
Ingredients:
1 cup butter, softened
2/3 cup sugar
2 eggs, beaten
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon salt
1 teaspoons vanilla extract
1 cup raisins
Instructions:
Preheat oven to 375 deg. F. Lightly grease two cookie sheets. Cream the butter and sugar together well in a large bowl. When light and fluffy add the beaten eggs, flour, salt and vanilla. Stir until well blended then add raisins.
Drop by teaspoonfuls onto the prepared baking sheets. Bake for approximately 8 to 10 minutes until golden and baked through. Place on wire racks to cool.
Tip: We recommend using Watkins Vanilla extract for the very best flavor in all your baking.
